Enjoy your Xmas dinner with those perfect roast potatoes on your dish! Whether your choice of normal or sweet potato, these go down a treat.
1 large potato (or 2 medium potatoes)
Drizzle of oil
Dash of salt
Cook Time – 30 mins
Cut the potatoes into small-medium sized chunks. Pre-heat the oven to 200 degrees.
In a bowl, place the potato chunks, drizzle a little bit of oil in (enough to mostly cover the pieces) and add the salt and herbs.
Mix in the bowl with your hands to fully coat the potatoes in the oil, herbs and salt.
Line some tin foil with a tiny bit of oil to prevent sticking and place the potatoes on top on a baking tray.
Put into the oven and turn over about 15 minutes into cooking. Keep an eye on them and remove once the skin looks crisp.
