Xmas Countdown - Cashew Orange Chicken Stir Fry

Flavoursome and delicious, this stir fry recipe is fantastic and easy to make. It's full of flavour without the need for pre-made high sugar sauces and packed with nutrients.

 

 

Cashew Orange Chicken Stir Fry

 

1 tablespoon oil

2 chicken breasts

2 peppers

1 red onion

1 teaspoon shredded orange peel

1/2 cup fresh orange juice

1 cup unsalted raw cashews

herbs and spices

 

Cooking Time - 20 mins

 

  1. Slice the chicken breasts into thin strips, do the same with the peppers and red onion.

  2. In a wok, heat the oil and add in the chicken. Stir for 2-3 minutes then add in the peppers and onion. Cook further until the vegetables start to soften.

  3. Remove the chicken and veg from the pan into a bowl and cover. Wipe out the wok with paper towel.

  4. Add the orange juice into the wok and cook until juice boils and slightly reduces. Add the herbs and spices as desired (garlic, chilli and paprika work great) and cook for a further minute.

  5. Add back in the chicken and veg mixture to the wok. Stir in the orange peel and cashews and cook for a further 5 minutes, ensure chicken is thoroughly cooked.

  6. Serve and enjoy!

 

A lovely meal that can be made for guests, couples or just yourself and the great thing is this can be stored and reheated for another time, seconds for lunch at work! I find the herbs and spices add brilliantly to the taste of the dish while the cashews add a great crunch and you'll feel full afterwards even without a carbohydrate base to this meal.
