Xmas Countdown - Sweet Potato Pie

Try something new this Christmas and treat yourself with a delicious sweet potato pie. A common dessert found across America, give this recipe a try and take some of that guilt away from Xmas treats.

 

 

Sweet Potato Pie

 

1 (1 pound) sweet potato

1/2 cup softened butter

1 cup brown sugar

1/2 cup milk

2 eggs

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

1 teaspoon vanilla extract

1 (9 inch) unbaked pie crust

 

Cook time - 2 hours

 

  1. Boil sweet potato whole, for around 40 mins or until ready. Wash with cold water and remove the skin.

  2. Break apart the sweet potato and mix in a bowl with the butter well. Add in the eggs, milk, nutmeg, cinnamon and vanilla and mix until mixture is smooth.

  3. Pour the filling into the pie crust.

  4. Bake at 175 degrees for 55-60 mins or until a knife comes out clean when placed in the centre.

  5. Leave to cool and enjoy!

As a big fan of sweet potato anything, this recipe was fantastic when I discovered it. However, I don't have the slightest idea about making a pie crust which is why I used a pre-made one. If you can, make it yourself by all means and enjoy this delicious pie helping to remove those tempting chocolates that will pile up over Xmas.
