Tuna Nut Salad
1 large can of tuna (can use more if preparing in advance)
1 tablespoon mayo
1-2 teaspoons honey (optional)
1/4 cup chopped walnuts
1 handful spinach
1 handful chopped lettuce
1 grated carrot
Preparation time - 5 mins
Open and drain the tuna, place into a bowl
Add the mayo and honey to the tuna and mix together
Grate the carrot, add the salad bits, walnuts and carrot into the bowl and mix it all together
A lovely simple salad, that can be prepared in advance for lunches you face on the go. Packed full of nutrients and vitamins, as well as the omega 3 EFAs from the tuna and a fantastic crunch from the walnuts. Fancy an added zing to this? Simply squeeze over some lime juice and mix it together.
