Give yourself a festive treat with this naughty but nice cheesecake! A lovely recipe with some tweaks from the norm, lowering the calories but keeping that deliciousness.
300g cream cheese
250g plain greek yoghurt
1 tablespoon of honey
¼ cup of milk
1 tablespoon of vanilla extract
Dash of salt
Cooking time – 1 hour 30 mins & cooling 3-4 hours
Preheat oven to 160 degrees (140 fan)
Soften cream cheese in a large mixing bowl by pressing down with a spoon
Add eggs and honey into the bowl and mix
Add the rest of the ingredients and continue mixing for 3-5 mins
Pour into baking tin (6’ pan works best) lined with parchment paper for best results
Bake at 160 for 25 mins then turn oven down to 90 and continue baking for another hour
Leave to cool in fridge for 3-4 hours
Enjoy, perfect with toppings
This creates a fantastic cheesecake to enjoy and simply add some toppings as you eat for a sublime treat. I personally like to add to this recipe a couple scoops of whey protein to it, adding that extra protein boost while continuing to enjoy your treats. You’ve also the ability to decide what cream cheese you’d like, with the options of going for the lighter versions with lower fat.
By removing the traditional biscuit base from the cake, we lower the sugar and therefore carbohydrate content of the dish but keep that lovely filling. Like your crunch from the base though? Well that’s where the toppings can come in, crumble a biscuit into the dish with your slice, add some fresh fruit like berries to it as a beautiful compliment to the cheesecake.
Enjoy the festive season with great food..
