Keep your fridays fishy with this beautiful dish, packed full of those fantastic omega EFAs from the fish! A simple yet delicious way to get the omegas into your diet and set your trend for healthy fish fridays.
Fish Friday - 2/3 Servings
2/3 Cod or Haddock fillets
2 medium sized potatoes - thinly sliced
Herbs & spices
2 Teaspoons of oil
Cooking time - 20 mins
Pre heat the oven to 180 degrees.
Place the fish fillets onto tin foil on a baking tray, drizzle the teaspoon of oil over and season with the herbs and spices of your choice.
Finely slice the potatoes into thin disc like pieces, drizzle the oil over them in a bowl and season, mix in with hands to ensure all nicely and evenly coated.
Place the potatoes onto the baking tray and try as best to keep from touching each other, place the baking trays into the oven.
Put the peas in a saucepan and boil on the hob after the baking trays have been in for 10 minutes. Alternatively if using frozen peas/microwave bags, put in the microwave for the time specified.
Also after about 10 minutes, remove the potatoes from the oven and flip to help crisp both sides up.
Ensure fish is piping hot through before eating, remove both sets of baking trays, drain peas and serve.
This is a great and simple recipe to prep and then leave it to do its thing in the oven. The seasoning you put on the fish gives it a great flavour and the thinner cut the potatoes the crispier they will come out.
