Recipes - Chicken Enchiladas

Spice up the cold nights with this Mexican taste sensation, a meal packed full of flavour. This is a lovely meal to make for any occasion and can be spiced up to your preference!

 

Chicken Enchiladas - 2/3 Servings

 

2 Diced chicken breasts

3 Large wraps 

1 Large tin chopped tomatoes

2 Teaspoons tomato paste

2 Peppers - chopped

2 Carrots - chopped & grated

1 Tin chickpeas

Herbs & chilli spices

Handful grated cheese

 

Cooking Time - 30/40 mins

 

  1. Start with chopping the peppers, carrots and chicken breast into desirable size.

  2. Put the chicken pieces into the pan with a dash of oil (chilli oil works great to add flavour). Season the chicken with the herbs, some pepper and chilli.

  3. Once the chicken is cooked, add the chopped tomatoes, peppers, chickpeas and chopped carrots into the pan. Add more chilli seasoning and taste until desired hotness.

  4. Add in the teaspoon of tomato paste after a couple of minutes. Add the grated carrot into the pan a few minutes later. Pre-heat the oven to 180.

  5. Line your ceramic dish with the wraps, open so that the filling can be placed and wraps closed.

  6. 10 minutes after step 3, take the pan off the heat and fill the wraps one at a time, closing the wraps after filling. Once all the wraps are closed, place tomato paste on top to help them seal and spread the paste out. Drizzle the grated cheese over the top of the wraps and place in the oven.

  7. Remove from oven once the cheese has melted and ends of wraps start to look crispy.

  8. Share out and enjoy!

 

I find this a great tasting recipe, which is easy to make and can be chopped and changed to create different tastes and flavours. It's a lovely healthy way to make the filling, creating a variation of your own tomato sauce instead of using pre made sauces that can be full of sugar.

 

It can be made bigger or smaller depending on how many your cooking for or you can keep some extra filling back and re use with rice and have as a chilli etc. There are great possibilities for this recipe with plenty of licence to change and add the veg bits or the meat itself.

 

Flavoured totally to your wants with the spice to just hit the right notes time after time..
